Masala Chai: A Spiced Classic, Perfected

Now you’re not standing over a saucepan making sure it doesn’t boil over, you’ll have some time on your hands to make a real homemade masala chai blend. If this is your first time, it probably won’t be your last.

Ingredients

  • 9 green cardamom
  • 2 large cinnamon sticks
  • 4 slices of freshly, peeled ginger
  • 5 black peppercorns
  • 3 cloves + ½ tsp fennel (optional)
  • 1—2 teaspoon of sugar (to taste)
  • 1 tbsp of strong, black CTC tea (Assam does nicely), or try one black tea bag in the strainer

Instructions

Prepare the spices: Using a pestle and mortar, crush and mill the spices to release each of their aromas, or use a spice grinder to mill the spices to a fine size of around 1—2mm.

Assemble the strainer: Place the freshly milled spice blend into the chai maker’s strainer.

Add your tea: Add 1 tbsp of strong black CTC tea or a single black tea bag into the strainer along with the spices.

Brew the chai: Follow the brewing instructions on page 4 of the Loka Chai Maker™ Slow Start Guide, to prepare your perfect masala chai.

Add sweetener of choice to taste your garam-garam chai
