Ozzy (Osman Yilmaz) and his wife run 07OZ., two coffee shops in South London, one in Clapham North, one in New Cross (Deptford). He and his wife work a shop each, they often swap. Turkish, independent, uncompromising about the way things are made. The kind of people who believe that how you do something matters as much as the result.
We asked him how he would do iced chai in our Chai Maker. After a few days of experimenting, this is what he came back with.

What you'll need
- 65g of Loka Masala Chai Blend
- 500ml of unhomogenized whole milk
- 100ml of fltered water
- 5-6 stainless steel whisky ice cubes (the hollow kind)
- 420ml glass
- Glass or metal straw
- Pyrex jug. The kind that can go in the freezer
How to make it
Brew your chai as normal according to your stovetop type. When it's done, take it off the heat and let it settle for 4—5 minutes. No longer than five.
Cool it fast. Pour the chai into your Pyrex jug, ideally one that's been sitting in the freezer. Leave it for around 10–15 minutes until it's properly cold.
Build the glass. Put your ice cubes into a 420ml glass. Pour the cooled chai over.
Drink through a glass straw. Ozzy's specific about this: the flavour concentrates at the bottom of the glass. The straw gets you there.
