Recipe creator Meg (@gourmet_meg) has given summer chai a seriously good upgrade with this Iced Salted Coconut Chai Latte. Rich masala chai is paired with creamy coconut milk, caramel-like palm sugar and a pinch of flaky salt for a drink that’s refreshing and just a little unique.
Brewed in the Loka Chai Maker, the chai develops plenty of depth before being cooled, poured over ice and finished with coconut cream and a coconut-coated rim. It’s the kind of drink made for long, warm afternoons when a hot chai just isn’t on the cards.
Iced Salted Coconut Chai Latte
What you’ll need
- 2 tbsp Loka Masala Chai Blend
- 400ml full-fat coconut milk
- 100g palm sugar
- 300ml water
- 100ml coconut cream
- A few generous pinches of flaky salt
- Desiccated coconut
- Runny honey
- Ice
How to make it
1. Make the palm sugar syrup
Add the palm sugar and 100ml water to a small saucepan over a low heat. Stir gently until the sugar has completely melted and formed a syrup, then set aside to cool.
2. Brew the coconut chai
Add 2 tbsp of Loka Masala Chai Blend to the centre of the Loka Chai Maker, then add the coconut milk and remaining 200ml water.
Heat for 6–10 minutes, or until you see the chai begin to fountain. Continue brewing for another 3–5 minutes, until it develops a deep caramel-brown colour. Remove from the heat and leave to cool.
3. Prepare your glasses
Dip half the rim of each glass into a little runny honey, then roll in desiccated coconut to create a coconut-coated edge.
4. Build your iced chai
Fill each glass generously with ice and add 50ml of the cooled palm sugar syrup. Pour over the cooled coconut chai, then top with a generous spoonful of coconut cream.
Finish with a good pinch of flaky salt and serve straight away.
