When it’s too hot for a cup of chai, Jeanelle (@jeanelleats) has the answer. She used the Loka Chai Maker to brew an extra-strong masala chai before turning it into these creamy, refreshing chai popsicles.

Delicious straight from the freezer or dipped in a chocolate shell, they’re a simple way to get your chai fix all summer long.

Chai Popsicles

What you’ll need

  • 1 part water
  • 1 part milk
  • A generous amount of Loka Masala Chai Blend
  • 1 part heavy cream
  • Sweetened condensed milk, to taste
  • Popsicle moulds
  • Melted chocolate, optional

How to make it

Start by brewing your chai. Add equal parts water and milk to the Loka Chai Maker along with plenty of Masala Chai Blend. You want the chai to be stronger than you’d usually drink it, as some of that intensity will be softened once the mixture is frozen.

Brew until the chai is rich, fragrant and full of spice.

Remove it from the heat, then stir in one part heavy cream. Add sweetened condensed milk to taste. Remember that frozen desserts can taste less sweet once frozen, so you may want the mixture to be slightly sweeter than you would normally drink your chai.

Leave the mixture to cool before pouring it into your popsicle moulds. Add the sticks and freeze until completely solid.

Once frozen, enjoy them straight from the mould or finish with a drizzle of melted chocolate for a crisp contrast to the creamy chai centre.
