MasterChef UK quarter-finalist Rishi (@dish_by_rish), takes inspiration from a classic Italian tiramisu and turns it into an iced chai treat. It layers chai with brown sugar syrup, mascarpone cream and a savoiardi biscuit for a café-worthy drink that's perfect for a summer afternoon.
Chai-Misu
What you'll need
- 400ml filtered water
- 200ml whole milk
- 2 tbsp Loka Masala Chai Blend
- 30g brown sugar, brown sugar syrup or your sweetener of choice (adjust to taste)
- Ground cinnamon
- Savoiardi biscuits
For the mascarpone cream
- 25g mascarpone
- 75ml double cream (heavy cream)
- 15g caster sugar
How to make it
Brew your chai in the Loka Chai Maker using the chai blend, water and milk. Let it brew according to the instructions until the chai is rich, fragrant and ready to pour.
Cool it down. Transfer the chai to a jug and leave it to cool completely, then chill it in the fridge. Cold chai makes the best iced drink.
Make the mascarpone cream. Whisk together the mascarpone, double cream and caster sugar until thick, smooth and spoonable.
Build the glass. Add the brown sugar, syrup or sweetener to the bottom of a glass, then fill it with ice and pour over the chilled chai. Top with the mascarpone cream, finish with a dusting of ground cinnamon and serve with a savoiardi biscuit.
